Les Vieilles Vignes » is the result of rigourous plot selections amongst vines which are over 30 years old
on the best terroirs of the Saint Mont appellation Generous and complex this cuvee offers flavors of
blackfruits with subtle toasted notes, bitter chocolate and noble leather
To be enjoyed with grilled steak, roasted duck or cheeses
The terroir
Careful selection of the three best terroirs of the appellation clay limestone, variegated clay and
fawn coloured sand The natural sweetness of the fawn coloured sand combined with the richness of
the variegated clay (covered to varying degrees with rolled pebbles) and the minerality of the clay
limestone subsoil gives this blend a unique complexity
Ageing
When the malolactic fermentation has taken place, the wine is blended and left to mature for eleven
months in French oak 225 l barrels 30 new) During this period of barrel maturation three rackings take
place before the barrels are blended in tank for a period of four months in order to bring complete
harmony
